Probably the lightest of all sherry styles, Manzanilla is aged in barrel under a thick bread-like coating of flor (yeast) all year round due to the cooler weather found near the coast in Sanlucar. Serve this chilled as an aperitif. Bone dry it has an excellent nose of nuts, spice, and even a little saltiness on the palate with a tangy, clean, crisp finish.
