Now we're getting into the blends. Aged as an Oloroso some Pedro Ximenez is added before bottling to add a little sweetness. There are flavors of dried fruits, nuts, smoke, and caramel on this elegant and complex wine. It has beautiful balance and sturdy structure of acidity which lends to a dry finish. Do your old grandmother a favor and give her this sophisticated drink instead of Harvey's Bristol Cream. This is a dessert wine. Serve at cool room temperature.
