Castel del Monte D.O.C., in Puglia, is an appellation that takes its name from the splendid and enigmatic castle built by Emperor Frederick II at the beginning of the 13th century. The wine itself is 100% Chardonnay that sees no time in oak and undergoes some malolatic fermentation; both of which provides for a pure expression of Chardonnay, with a slight plush texture.
