This is Jacopo Poli's interpretation of Cognac, although more delicate than any Cognac I've experienced. Using the must from the local Trebbiano, the brandy is aged for a time in three typed of oak barrels - Slovenian, Limosin, and Allier - for a total of ten years. The result is astounding. With a delicious aroma of vanilla, dried fruit, tea and nuts, it is nearly sweet on the tongue and very smooth to drink. Faint caramel flavor with the most delicate of bodies. Extremely delicious. It is a pure pleasure to drink.
