This wine is majority old vine Chenin Blanc at 87% with a bit of mature vine 13% Semillon. This old vine Chenin Blanc was made as an exploration of the cape as seen through the vines. Fermented with wild yeast in old barrels, founders, clay pots and cement eggs only a small addition of Sulphur is added during fermentation for stabilization. Aromas of sliced apples, stone fruits, citrus zest, wet stone and honey suckle. Soft acidity on the entrance with textural richness on the mid palate makes a well-balanced and focused wine.
