One of the first craft distilleries we discovered was Anchor distillery. At that time they made a couple Rye whiskies and a sensational gin, Junipero. This bottling recently caught my eye. The Old Tom style has a little sweetness going on, which contrasts with the sometimes sharp London dry style. Pot-stilled and bottled unfiltered, it gets its sweetness from star anise, licorice root and Paraguayan Stevia. The cocktail Tom Collins gets its name from Old Tom, and an Old Tom and tonic seems like a no-brainer.
