Jean François Ganevat achieved winemaker of the year in 2018. His wines are fascinating and delicious, coming from the best terroirs of France's Jura region. Vineyard and winery practices are certified organic and biodynamic, as well as falling into the natural categories. The wines showcase the region’ s native as well as international varieties. The Les Dentelles is a blend of equal parts Grenache and Syrah. This wine is also vegan. Only indigenous yeasts are used in the fermentation process, and wines are aged in amphorae for one year, and bottled unfined and unfiltered.

Jean-François Ganevat has looked to the past to move forward. As with many of the world’s best winemakers, he has re-discovered traditional techniques and grape varieties to make cutting edge wines. He trained in Beaune, spending 9 years as Maître de Chai at Jean-Marc Morey in Chassagne-Montrachet. "Fanfan", as he is known, returned to his family domaine as winemaker 1998 - the 14th generation of his family to do so since 1650. In 1999, his property was converted to biodynamic viticulture, and in 2006 he eliminated the use of sulfur. His viticulture crew destems grape bunches by hand. Vinification and elevage takes place in a variety of containers: demi-muids (600 liter casks), larger tronconic casks, and since 2014, unlined clay amphoras from Italy.
