Jean-François Ganevat has looked to the past to move forward. As with many of the world’s best winemakers, he has re-discovered traditional techniques and grape varieties to make cutting edge wines. He trained in Beaune, spending 9 years as Maître de Chai at Jean-Marc Morey in Chassagne-Montrachet. "Fanfan", as he is known, returned to his family domaine as winemaker 1998 - the 14th generation of his family to do so since 1650. In 1999, his property was converted to biodynamic viticulture, and in 2006 he eliminated the use of sulfur. His viticulture crew destems grape bunches by hand. Vinification and elevage takes place in a variety of containers: demi-muids (600 liter casks), larger tronconic casks, and since 2014, unlined clay amphoras from Italy.

This particular wine is considered a 'natural wine.' It is a multi-vintage blend of Clairette, Grenache Blanc, Picpoul, Riesling, Savagnin and Viognier, all from different vintages. A portion of the resulting wine is aged sous-voile (in contact with air creating a veil of yeast, much like fino sherry), and part of it goes through extended maceration, e.g. skin contact. The final wine possesses hints of oxidation, very deep concentration, as well as its beautiful fruit bouquet. The finish has a touch of bitterness resulting from the skin maceration.

WOW!! Elegant, exotic, multi-vintage, and a great example of a natural wine. An orange tinge, it is produced with skin maceration and time under a veil of yeast, giving it fino sherry-like floral and oxidative nutty aromas plus those of peaches, orange peel, fresh acidity, a touch of tannins from the skins. Pair with goat cheeses, pork or chicken, sausages, raclettes.
