A gem of a wine with popcorn, a whisper of oak toast, and curry spice along with apple, pear and citrus notes. Smooth texture accented by minerals and fresh acidity. Pair with turkey , fried chicken, firm white fish, popcorn.
Francoise and Michel Andre of Burgundy founded Domaine Francoise in 1983. The traditional family chais in the walled city of Beaune were refurbished. They began acquiring additional vineyard parcels in some of the best terroirs in the hills surrounding Beaune, focusing on cooler sites on the upper slopes of the cotes with old vines and younger limestone-dominant soils. They have grown their vineyard portfolio along these guidelines. Now they are also biodynamic, refusing to use any additives in the vineyard or winery.
For this wine, alcoholic and malolactic fermentations occured in barrel, 30% of which is new French oak. The richly textured wines from this female run domaine have been farmed organically, and biodynamically, since the 90s. From that healthy fruit you get tremendous expression and depth, along with plenty of nerve and life. Stuffed with spice, popcorn and toast, even some turmeric aromas. On the silken palate you get tons of concentration and layering that seems to evolve and change with each sip. Long life here.
