I’ve come to find that the sparkling wines coming from France’s Jura often taste closer to those from Champagne, more than the more prolific areas like Alsace and Burgundy. Here you can find more toasty and yeasty notes that flick at our Champagne recall buttons. Made from Pinot Noir and Chardonnay, with a little Poulsard and Savignin, (local varieties) added in for depth and complexity. Baked dough and citrus cream on the long finish.
