The commune of Pernand-Vergelesses is located at the northern end of Burgundy’s Cote de Beaune and is known for producing age worthy white Burgundy with classic Burgundian flavors but with a little more lift from high acidity. The average vine age for this bottling is 45 years old and is farmed organically, though they have not been certified. Ripe pear, green apple and holiday spices on the nose, all of that with the addition of fennel bulb and honey on the palate. Quite full in the mouth with a perfectly pitched amount of acidity to keep everything held tight together. I love just swirling, sniffing and drinking this wine it is brilliant when paired with strong cow’s milk cheeses, white fish and simply prepared chicken, maybe in a mustard sauce.
