With each vintage Dragonette strives to produce wines of complexity, balance and textural elegance. To achieve these high goals quality vineyards such as the sandy biodynamically farmed Duvarita are used. Here grapes have small clusters producing wines that are lean and elegant but still rich with intensity. Barrel fermentation and aging on the lees (spent yeast cells) are used for richness and complexity. Only partial malolactic fermentation was used to preserve freshness and vibrancy. Only 12.5% new French oak was used with 12 months aging to not overwhelm with high amounts of oak flavor. 180 cases produced.
