VINEYARD From three separate blocks from the cool-climate Occidental Ridge Vineyard.
VINIFICATION 10% of the whole clusters are fermented in an upright foudre; the rest is de-stemmed and fermented in stainless steel. After 12-14 days of native fermentation with gentle punch downs, the wines is pressed to barrel and allowed a native malolactic, before aging on lees for 11 months.
AGING 30% new French oak, 30% second year, and 40% third year. Bottled unfined and unfiltered.
