Bit of a nerdy wine here, but one that is succulent and beautifully structured. Made from 100% Roussanne, all biodynamically farmed, hand harvested and fermented in concrete eggs. Aromatically you get stone fruit and almond butter. Dry wine but with a tremendous richness and super complex layering. I love to just sip it but a white this big will easily hold up to sturdy fish dishes, well-seasoned poultry and even sultry ribbons of cured ham alongside some pungent and gooey cheeses.
