This is considered one of the very best Cabernet Sauvignons made in Australia, and cool climate Western Australia in particular. If you like powerful yet smooth, elegant and well-fruited classic Cabernet Sauvignon, this wine was made for you. Big, smooth and supple, but with great depth and balance, this is an exercise in opulence, class and elegance. The intense nose is full of dark berry and fine French oak. The blackberry and black currant fruit is explosive yet oh-so-smooth in the mouth, with a slight herbal edge and hints of cocoa and mocha and classy fine, smooth tannins. The long finish has depth and complexity. Sourced from the very best vineyard owned by the Burch family, the grapes are hand-picked, de-stemmed and hand selected before fermentation in open top stainless-steel vats and static small fermenters, with pumpovers and hand plunging as required. After being gently basket pressed into French oak for 18 months of maturation, it spends six more months in bottle prior to release. Due to the excellent structure, this wine can age for at least five to ten years, but is very drinkable now with a good decant. This wine blew people away at a recent tasting. It is worth every penny and then some.
