Illahe 2021 Pinot Noir Willamette Valley, Oregon
This pinot is sustainably grown and hand picked. We do not add anything to extract color. We use 20% whole cluster. Fermentation is 100% native yeast. We macerate on the skins for 24 days, scoop
the pomace into the press by hand and press in a wood basket. This wine is aged for 9 months in barrel with 10% new French oak barrels and 90% neutral French oak barrels.
