The Jura is home to about (40) different grape varietals. This cool, climate location between Burgundy and Switzerland, grapes are planted at varying altitudes and gradients. A range of styles is produced in Jura of which this cremant is popular. Winemaker Jean-Francois Ganevat is practicing his trade with the zeal of a magician. He comes from a long line of winegrowers, dating back to 1650, supplementing their income by managing a dairy used in making the local Comte cheese. The main grape used in this cremant is Chardonnay, and there is no dosage. The wine has spent (4) years on its lees.

Jean Francois Ganevat worked with his father and Domaine Jean-Marc Morey in Chassagne-Montrachet to gain experience. He took over the family estate in 1998. The estate is only 8.5 hectares in size, growing (17) different varietals, both red and white.  The estate is certified biodynamic.
