The Yount’s purchased 25 acres in the York Mountain AVA in 2011, a steep property at 1400-1800 ft elevation with three different exposures. This is not part of Paso Robles, and it’s a small AVA with just 70 acres of vines. We wanted to make a singular wine from this site – one wine. There are 7 acres in production. Mainly Grenache with Syrah and Graciano, and a bit of Clairette Blanche. ‘We do a lot of coferments,’ says Yount. Fermented in concrete and foudre, with 35% whole cluster ferments (he does either whole cluster or destemmed, then presses off the whole clusters and blends with the destemmed wine still on its skins).
My passion for white wine, no doubt, stemmed from my father’s distaste for it. It’s not that I set out to make white wine out of spite, but rather, he inspired me. You see, he claimed to only like red wine, so it became my goal to find balanced and interesting whites that he would like. It didn’t take long as he slowly began to appreciate the depth and complexity that carefully sculpted whites can deliver. When I was presented with the opportunity to make my own wine, it was an easy decision to focus on making white wines. These wines are not only for those drinkers that enjoy the nuances of a handcrafted white wine, but also for those who pretend not to.- ANTHONY YOUNT
