All estate grown fruit is destemmed then fermented with skin contact for 7 days. After spontaneous malolactic fermentation, the wine is rested in cement vessels for months before being bottled. Savory vegetal flavors up front lead to roasted cherries, hints of green pepper bring back the savory focus. These vegetal characteristics create a mild tannic structure that makes way for notes of black cherries on the finish.
