Saint Aubin is often in the shadow of Chassagne-Montrachet or Puligny-Montrachet, but recently has achieved a remarkable increase in quality. The appellation has 113 hectares of white (with 87.5 in Premiers Crus) and 50 hectares of red (with 35.50 hectares in Premiers Crus). No roses are produced in this appellation. The white clay soils of limestone produce excellent white wines. The altitude varies from 300 to 350 meters, here, on sometimes very steep slopes, facing southeast or east. For this premier cru. "Sur Gamay," Alix de Montille vinifies grapes from four vineyard parcels with vines an average age 40 years old.
The hamlet of Gamay is part of the appellation Saint-Aubin. It is not to be confused with the grape of the same name. At this location, near that of the famous Puligny-Montrachet, the Chardonnay blossoms perfectly.
Grapes are entirely manually harvested. Also, they are pressed using pneumatic presses which can be gauged according to the quality of the grapes and vintage profile. After a short time settling, musts are placed in 600-liter and 228-liter barrels where the alcoholic and malolactic fermentations occur. 5 to 20% Allier new oak with a light toast are used. A distinctive white Burgundy from a talented estate.
