This is a truly rare treat. Only 1,000 bottles made, that’s bottles not cases, of which only 250, again bottles NOT cases, were brought to California and I nabbed 12 of those the second I tasted this wine. Made from 55% Pinot Noir and 45% Chardonnay, all organic and biodynamically farmed. The nose here is incredibly expressive, giving you tons of apricot and anise. On the palate you can find lemon rind, cold chalky minerals and a curve of richness that reminds me of honey candy. Only 3 grams of sugar this is without question a dry Champagne, but it isn’t that kind of dry that shows austere. You love grower Champagne? You owe it to yourself to try this.
