Sebastien Mouzon takes an innovative approach to his blending, utilizing the solera system inspired by sherry producers.  In essence, it is a pyramid of casks, the new wine blended into last year’s, on and on until drawing off the bottom to make up the base wine.  The impressive results are layers and layers of incredible aromas, flavors and textures that justify its premium price.  Mouzon farms just 20 acres of Grand Cru vines, the resulting fruit producing a terrific, clean, mineral-driven, very satisfying bubbly.
