Have to say I was gobsmacked when I heard the price of this Champagne considering the tremendous depth of flavor and richness in the bottle. Made from mostly Pinot Meunier with some Pinot Noir and Chardonnay to fill it out. Winemaker Maxime Ponson had to argue with his father about not covering their vines with commercial herbicides or pesticides and to especially refrain from doing so when there is no reason. Do the work in the vineyards by hand and don’t destroy the health of the vine with Roundup, “If you don’t have a problem then you won’t need the medicine”. They disagreed for years but his father let Maxime care for a plot of vines as he wanted and the result has been amazing. Sadly his father Pascal passed before seeing just how more life there was in the wines made from that plot. Since Maxime’s brother, Camille, has joined the team and they are doing all the work in the vineyards, mostly 100% clean. This wine is a tribute to farming clean, giving back to the earth and minimalist intervention. Bursting with white flowers, stone fruit, buttery crust and a tiny hint of lemon on the long and lifted finish.
