A long way away from the Pax of old. here we find a retrained, textually compelling pink wine that isn't loaded with gobs of dark fruit. A dry rose made from Trousseau Gris that has a lovely scrape of tannin. Delightful.
When was the last time you sat down to a chilled glass of Trousseau Gris? Yeah, us too. The name Pax once evoked ideas of richness and extraction but now, under this labeling Pax Mahle is making wines that have tons of presence but also restraint. This dry rose is calling for grilled veggies and pesto, grilled fish or oysters and the delicate scrape of tannin on the finish just tightens everything up. Bravo.
