The delicate and beautiful fruit for this Blanc de Blancs come from two Grand Cru villages, Oiry and Chouilly, both from vineyards that are sustainably farmed and with an average vine age of 45 years. Made with a very low dosage though one wouldn't know it for the sheer exuberance of fresh fruit. On the nose you find fresh cut green apples, sliced fennel bulb and an amazing aroma of spring flowers. Full in the mouth but not rich or coating. The bead is super, super fine and leaves the palate like lace. Drinking great now but has the pedigree to hold up for years in the cellar. Only 250 cases made.
