Renowned French winemaker, Jean-Claude Berrouet of Chateau Petrus, was brought on as a consultant. This Merlot reflects the vintage: concentration and structure drive this commanding Merlot: aromas of black cherry, coffee, licorice, and cream lead to a dense and velvety palate of chocolate covered cherries and an intriguing touch of hoisin sauce with a finish that goes on for days. 80% Merlot, 15% Cabernet Franc, and 5% Petit Verdot, aged in 32% new, 31% once-filled, 18% twice-filled French oak. Elegant and refined, this pairs perfectly with Winery chef Dominic Orsini’s Buttermilk Fried Quail or Roasted Duck Leg Salad.
