Vincent Couche has been farming his land organically and biodynamically for many years but in 2008 he got his certification. Made from Pinot Noir and Chardonnay, each parcel vinified separately to keep the focus on the specific terroir rather than just making wine by formula. Vincent also uses his hens to help aerate the soils with their pecking and scratching, how natural and organic is that?! This Extra Brut shows an electric purity. Laser sharp focus, floral notes, and baked apple all over the palate. Tiny bubbles bounce about in the glass and the finish is light and airy. Perfect for sipping but with enough packed fruit to go with everything from poached seafood, cheeses, to fried goodies and gooey egg dishes.
