Xavier Reverchon has been farming his vines organically for the past 30 years. While in enology school as a young man he was instructed that the best way to protect his vines from the harsh climate was to dump Roundup all over his soils. Took just a couple vintages for Xavier to notice how damaging those chemicals were to his vines so he halted the practice and returned to organic farming. I adore the purity he is able to get from his Chardonnay. Deeply nutty with green apple and pear skin on the nose. Medium weight on the palate with a slightly high toned amount of acidity. This wine is craving strong cheese, roasted or baked chicken or white river fish in cream sauce.
