Girard-Bonnet Champagne Extra Brut Grand Cru
Young Paul Girard, (born in 1995) after completing enology, and wine business programs, returned to Champagne where his parents both own and tend vines, and he began the Girard-Bonnet label. Mi Chemin, or “My path” refers to his using both his parents’ vineyards to make his way and share his passion for his homeland. Something he sweetly gives a nod to on the label. His wines are certified organic and made from 100% Chardonnay. I was instantly charmed by this Extra Brut, as it sows plenty of ripe fruit and flowers, even though the sugar added is very, very low. I loved the juxtaposition of sturdy stalked white flowers, honeycomb, flint, and a mouthwatering flick of salinity. Gorgeous tension and lift. Bring on the briny seafoods, chips and gooey cheeses.
