Pierre Gerbais N.V. Extra Brut Grains de Celles, Champagne

Made from 50% Pinot Noir. 25% Pinot Blanc and 25% Chardonnay, these wines from Gerbais just keep blowing our minds. I had to bring this in for a Pinot based tasting we were doing, just to be a little tricky with the term Pinot. Baked apples, pie crust, fresh shaved fennel and aromas of toasted nuts. Deep on the palate but with enough lift and citrusy nerve. Great balance.
