A. Chauvet N.V. Champagne Grand Rosé, Tours-sur-Marne
Few rose Grand Cru champagnes are priced as affordable asthis one is. The distinguishable style of this honored Champagne house sets them apart. This perfect rose is exactly balanced with a beautiful color, demonstrating freshness and elegance while simultaneously revealing a rich backbone of fruit. This Grand rose is blend of Pinot Noir and Chardonnay from vineyards planted on chalky bedrock in the Grand Cru Village of Tours-sur-Marne. Each parcel is vinifed separately, with 20% of the final blend from reserve wines stored in neutral oak casks. Malolactic conversion is blocked to adhere to the desired precise style. The resulting wine is aged 36 months - as opposed the required 15 months - to lend additional richness and flavors.
A rich nose of red fruits - raspberry, strawberry - and stone fruit - white peaches - orange zest, roses, baking spice and brioche. Clean and fresh on the palate confirming the nose. Serve with pan-roasted fish - especially salmon and artic char - light chicken dishes, appetizers, on its own.
