Aurore Casanova Champagne Brut

The current generation winemaker was a prima ballerina before taking over the winemaking at the family domaine. She has been making dynamic changes from planting to marketing and you can feel her persistence and dedication upon first sip. Equal parts Pinot Noir and Chardonnay with a little Pinot Meunier to round things out. This wine has the energy of a dancer, like muscle wrapped in lace. Dense, laser sharp, focused fruit, framed by just a hint of toast. Very elegant while still being a mouthful of gorgeous Champagne.
