MI CASA TEQUILA BLANCO- JUNE'S SPIRIT OF THE MONTH
June’s Spirit of the Month is Mi Casa Tequila Blanco 2011. Some of you might be asking “what’s with the ‘vintage’ on a Blanco Tequila? Is this just some old Tequila someone was trying to get rid of?” Not at all folks! This Blanco Tequila was rested in stainless steel for 11 years before being released. A very round, coating mouthfeel, soft white pepper leads to rich apricot fruit. There is a creaminess in the profile, but it doesn’t bring along any sweetness. This Blanco has a mouthfeel like one would get from agaves grown at high altitudes, but still a nice savory aspect which allows the natural flavors of agave to shine. Fans of Blanco Tequila will enjoy this, and those who think Blancos can be a little too sharp can enjoy the softness of this Tequila.
The agave grown for this expression came from Michoacan, they were transferred to Jalisco, cooked in a low-pressure autoclave, and were pressed by a roller mill to extract the juice. It was fermented in stainless steel with deep well water, it was open-aired fermented and had Champagne yeast added. It was distilled in stainless pots with copper coils, and as mentioned before, rested in stainless steel tanks for 11 years before being bottled.
