Causse Marines 2020 Gaillac Blanc "Les Greilles", France

Made from organic and biodynamically grown Mauzac, Muscadelle and Loin-de-l’Oeil, so basically all new flavors and aromas to most of us. Quince and slow roasted stone fruit on the nose, along with flowering greens and toasted almond notes. Fuller in the mouth but not at all oaky or heavy. This would be really nice with stronger fish dishes, or things with fish sauce, as well as middle eastern chicken or veggie dishes. Very cool and quite nerdy but also, delicious.
