Want to win a wine-bar bet? This tiny white wine appellation near Chablis in northern Burgundy is only permitted to use Sauvignon Blanc, the only such appellation in Burgundy. This may sound strange, but Saint-Bris is closer to Sancerre than Beaune, and the same swath of limestone found here also travels through the Loire Valley. 50% of the vines are 10-15 years old and 50% are 15-40 years in age. The wine is vinified at cold temperatures in stainless steel vats using native yeasts and aged on its fine lees. It shares many attributes with top bottlings of Sancerre from terres blanches soils, and it is generally cropped at lower yields than all but the very best estates in Sancerre. Brilliant minerality and poise from this master of the appellation. Nose of citrus and melon. Very long and intense.
