Imanol Garay 2021 Ixilune, Southwest France

You ever just have a feeling in your gut that there is something you just need to do? That was how I felt when I tasted this crazy, complex wine from the southwest of France. Made from Petit Et Gros Manseng, Raffiat De Moncade and Petit Courbu, so you know, all those varieties we have all tried so many of. There is truly no other wine I can think of that you can judge this one against as it is honestly a unique thing. Organic, biodynamic and with varying aging vessels, this wild wine is all about layers of nearly daunting complexity. Full and sexy in the mouth, it is both silky and racing with fine acidity at the same time. Plenty of bruleed citrus here and there is even a wicked cool saltiness that stays with you on the long, intriguing finish. This is a wine that was MADE for people that love to learn and taste things unlike any other, and I love it for that.
