Noel Bazin Champagne Blanc de Blancs Brut "L'unanime"

I’d love to share with you the history and personality of this domaine but sadly, as of yet, I’ve not met or even been able to read much about them. A fact I aim to change on my next visit to the region because I want to meet the couple that make this ultra-impressive, super-complex Champagne. Made from 100% Chardonnay and with 50% reserve wine that is treated like a solera system in Sherry. Here we are rich with stewed apples, nuts and marzipan. Dry and extremely complex with a linger that just keeps giving. Big wine that is ready for some big flavors. Think spiced meats, Asian food, and ripe, soft cheeses.
