While Sylvere and Mathilde’s vineyard is in Beaujolais, the Syrah, Grenache and Carignan this wine is made of comes from South of Beaujolais in Roussillon, hence the name, translated to Blend of the South.
Description
The grapes were fermented with skins for about a week, the wine was aged in cement and then in bottle. Before bottling, the wine was not filtered or fined and had zero sulfites added. A little bit of an earthy, funky wine; there are notes of black olives and hints of barnyard. Rich black cherry fruit and a little acidity to keep it light.
