Founded in 1984, Tsar Nicoulai raises sturgeon in huge tanks in Wilton, California, using the highest standards of sustainability. Their farm is home to different stages of sturgeon, all spawned in their own hatchery, maintaining unique white sturgeon genetics. The sturgeon are raised upwards of eight years, and fed an ultra premium NLAP non-GMO fish feed, never given growth hormones, and do not receive antibiotics. This is a true testament to how dedicated the process is to farm happy sturgeon.
During the summer, natural aqua plants cool the fish. The same plants organically filter the pure well water that fills the tanks. Paired with the California sun and a natural ecosystem, our fish enjoy a free-range environment. Compared to sturgeon farmed with shortcuts, the superior taste and quality of Tsar Nicoulai caviar is undeniable.
The Tsar Nicoulai Estate Caviar boasts a rich, clean and earthy flavor with deep brown to jet black medium sized beads. Less is more with Estate. Enjoy straight from a Mother of Pearl spoon or atop a soft mild base like lightly toasted bread or blini. The creamy finish pairs nicely with a glass of Extra Brut Champagne or Dry Sparkling White Wine.
