Description
Typically for a Pechuga, producers will hang the meat above the open fermenting tanks so it is cooked slowly and the oils/fats will drip into the liquid. Xicaru puts the whole chicken in the tank along with Mole paste. Great texture, light notes of coco lead to hints of white pepper. Subtle spice on the finish.
