A. Chauvet N.V. Champagne Cachet Vert Brut Blanc De Blancs, Tours-sur-Marne

Only 750 cases were made of this handsome, dry Blanc de Blancs from one of our favorite Champagne growers.  This crisp bubbly comes from Chardonnay vines with an average age of 35 years old, from two sources, one a Grand Cru and one a Premier Cru, both grown in ancient chalky limestone.  Using 20% of reserve wines stored in old casks, the wine ages on its lees for 3 years.  Importer’s notes: “Chauvet’s NV Blanc de Blancs is the epitome of the complexity that real champagne lovers look for.  Creamy notes of pears and melons jump out of the glass, complemented by the signature chalky mineral notes of its terroir and aromas of freshly baked brioche.
