Description

Vin Santo is the amber-colored sweet wine specialty of the Chianti region of Tuscany, and this perennial favorite comes from the great Badia a Coltibuono estate.  The bunches of Trebbiano and Malvasia grapes are grown in a dedicated vineyard at Monti in Chianti.  Carefully selected grapes are left to dry in well-ventilated rooms.  Wild yeast fermentation and ageing take place in small oak casks, sealed and exposed to seasonal temperature variations for a period of 5 to 7 years.  "The wine of the Saints" (some translate it to "holy wine") is classically served with the small local biscotti called "cantucci", with or without dipping in the nectar before eating.
