Castell de Sant Pau N.V. Cava Brut Nature, Spain

Traditional Cava grape varieties go through secondary fermentation in the bottle.  There is a bit more going on than in a typical Cava, both in the aroma and the more serious flavor.  The first thing you’ll notice is how the bubbles explode in the mouth, growing like a nuclear bomb—more and more!  Despite the better-than-average complexity, this bubbly has a clean finish.  Great value.
