Description
The “Eye of Partridge” is a poetic description of the lightly coppery color of this explosively effervescent champagne. It is made entirely from Pinot Noir which gives the wine its distinctive hue and sheen. There is a slight oxidative note in both aroma and flavor which only adds to its complexity and enhances the long, persistent finish that makes this wine so satisfying. I can’t wait until we re-introduce this wine in a future Champagne tasting.
