Inniskillin 2022 Sparkling Vidal Icewine, Niagara Peninsula, Canada - Half Bottle

Vidal is a hybrid grape variety (Ugni Blanc and Seibel) bred to ripen in cooler weather.  It may remind some as Riesling-esque, but it really has its own character.  Inniskillin’s inventive creation picks the very-late harvest Vidal below freezing, fermenting the few very sweet drops into very sweet wine, then inoculated with a very specific strain of yeast allowing the juice to ferment under pressure in a charmat tank until it reached an alcohol of 9.5%.
