Laherte Freres N.V. Champagne Blanc de Blancs Brut Nature, Chavot, Marne

Heads up, acid heads!  This bubbly is for you.  Made by the brothers Laherte, from an estate founded in 1889, grapes are grown biodynamically and organically.  This all-Chardonnay grown in chalky soils has no dosage and it slices across the tongue like a razor blade.  The wine inside is quality—using 50% reserve wines.  Focused, tight, with a wisp of cheese in the aroma, it is bone dry and searing.  The flavors are there, particularly the long chalky aftertaste, but the wine is so bright you may not find it at first.  Not for the weak-hearted.
