One Stone’s 2021 Cabernet doesn’t declare itself—it anchors attention. It opens with a layered inhale: plum ripeness, cassis core, one whisper of black olive, a flash of caramel bar—bold, yes, but never loud.
What follows is a compact torrent of flavor. Black cherry and black currant sweep into mocha, cola, and a cedar-soaked spice bubble, all carried by tannins that are all at once silky and insistent. Approachable heat, but with a spine.
This wine wears its intent on its label: part of the One Stone project, each bottle contributes to Dream Big Darling, supporting emerging women in wine. The vineyards span Paso’s breathing hills—from dusty flats to rising slopes—bringing both weight and whisper in every glass.
Winemaking is tailored with purpose. Fruit from select blocks undergoes cold-soak, followed by 15 months maturation in French and American oak (15% new), with small proportions of Malbec, Syrah, and Merlot blending in for depth and softness.
This isn’t Cabernet that screams for attention—it lingers in the mind for asking. A wine that balances Paso’s sun-kissed force with intentional composition; more conversation partner than showpiece.
