Patrick Piuze 2024 Bourgogne Blanc Tonnerre, Burgundy

Bourgogne Tonnerre is a small region 8 miles east of Chablis, and Patrick selects this fruit from 2 south-facing plots.  This northern region creates conditions that make it a bit harder to ripen, the wine retains much of the same minerality found it the stellar Chablis of the region with a more straightforward demeanor.  Piuze chooses not to use cold stabilization—he doesn’t want to remove anything from his wine—so the wine may throw some tartrate crystals.  There is an elegant texture to the wine, with a solid structure and long finish.  Serve this with chicken, fish, cheese and vegetables.
