February's Spirit of the Month - Bardstown Bourbon Company Origin Series Wheated Bourbon

February’s Spirit of the Month is Bardstown Bourbon Company’s Origin Series Kentucky Straight Wheated Bourbon. Aged for 6 years with a mashbill of 53% corn, 39% wheat, 8% malted barley, it’s not surprising that while this Bourbon is expressive, it has a soft approach. Honey and dried coco lead to oak spice and hints of apple. There’s a light coating mouthfeel that reminds me a little of the milk at the end of a bowl of cereal. The soft fruit, hints of sweetness and delicate spice all combine to create a well-balanced and vivid profile. The Wheated Bourbon category has become very popular over the last two years, while there have always been Bourbons in this classification, Maker’s Mark and Weller being the most known, you are seeing more distilleries make the expression.

What is Wheated Bourbon? Some of you might be asking. Just like all American Whiskeys, the answer is in the mashbill. Most Bourbons will have about 3-6% wheat in their mashbill, if they are using wheat at all. But once a Bourbon gets to 18%+ of wheat, it is considered a Wheated Bourbon. Much like a Bourbon with higher than 18% rye is considered a High-Rye Bourbon. Since wheat is taking the place of rye, the overall flavor profile is softened. Those spice flavors are replaced with “sweet” characteristics, which has helped many who thought Bourbon was too “spicy/hot” to find that they enjoy the American Spirit.

Bardstown Bourbon Company has made a name for themselves through their Collaboration, Fusion and Discovery Series of expressions. While some of the Whiskey they used in these labels were their own, a lot of it was purchased from distilleries around the United States and sometimes Canada. They also use different types of barrels to finish their Whiskeys - barrels that once held Rum, Cognac, other Whiskeys and more. With their Origin Series, Bardstown Bourbon Company is focusing on Whiskey made by them from start to bottling. And while many have enjoyed Bardstown Bourbon Company’s masterful blends, I think their craftsmanship of their own Whiskeys will put them in even higher praise than they already have.
