POPULARITY OF PASO

Bold Juicy Reds of Paso was a total hit on Friday night, July 26th! With a sold-out class and a pretty long waiting list, we will be sure to do another Paso tasting soon. One of the best parts of Paso Wine Country is its proximity and the amazing range of varieties and values you can find. We explored a few fun Italian varieties with the winery Giornata. These wines showed a juicy but lighter side of Paso, very food friendly - the Campo Rosso was a hit for a wonderful summertime chilled red and a great pizza wine. We then dove into some Rhone-style varieties with the classic style of Tablas Creek, the bold side with L’Aventure, Denner, and Adelaida. The Keeper from Adelaida was a clear winner of the night, not only the great value behind it at $26.99, it was bold without being too heavy, just like a GSM-style wine should be with the influence of the California sun. The Cabernet Sauvignon options of the night were hits across the board and I will have to order more of all of these so more of you can experience these delightful bottles of wine. Field Recordings' “Hoss” is a perfect example of an almost pure expression of the grape Cabernet Sauvignon because of the Natural Winemaking approach. Andrew at Field Recordings started as a farmer and really focuses on the fruit and wanting it to shine to its fullest potential, by just using oak to help the grape shine. Ancient Peaks showed us why their Oyster Ridge Vineyard is just so special. Blending together 75% Cabernet Sauvignon, 12% Cabernet Franc, 7% Petite Verdot, 3% Merlot, and 3% Malbec, they created an intensely juicy, dark, bold - but soft - cuvée. This wine embodies dark fruit, leather, and toasty oak and all I can picture is a cowboy around a fire on a summer night, which to be honest is kind of the image that sits in my head for Paso Robles as a region. A sell-out that will be coming back is the Adelaida Cabernet Sauvignon that has 10% Cabernet Franc blended in, it was mouthwatering and juicy, showing off a cool spice element but still full of dark cocoa and juicy berry fruit.
